4 oz. Smoked Salmon
8 Blue Corn Cakes (below)
8 T Melon Relish (below)
8 Chives
4 T Choice of Sprouts
Blue Corn Cakes (makes 1 cup of batter)
1/2 C Blue Corn Meal
1/4 C All-Purpose Flour
1/8 tsp Baking Powder
1 tsp Sugar
1/8 tsp Salt
1 Whole Egg
1/2 C Non-Fat Milk
Mix ingredients until smooth. In pre-heated non-stick skillet, make cakes using 1 T of batter for each cake. Cook approximately 30 seconds until golden brown. Turn cake over and cook approximately 30 seconds more, until done.
Melon Relish (makes 8T, or 4 Servings)
1 T Red Onion, finely diced
2 1/2 T Cantaloupe, diced
2 1/2 T Honeydew, diced
1 1/2 T Strawberries, diced
2 T Avocado, diced
1/2 T Cilantro, chopped
1 tsp Lime Juice
Mix all ingredients together and set aside.
Assembly
Place two chives, criss-crossed, on each plate. Place two corn meal cakes on top of chives (to resemble flowers on chive stems). Top each cake with 1 oz. of salmon, garnish with melon relish and finish with your choice of sprouts. Ready to serve.
